Smooth like butter, as the latest BTS song says. Like a knife through butter, as the saying goes. It’s the fat in the food which helps in cooking it, inadvertently making it more palatable. I was oblivious to its charms for most of the early part of my life. My family just didn’t know how to use it properly. Then once, I found out how bread and butter worked wonderfully together. Another time, I found how it made grill cheese sandwich tastier.
Cheese in the middle, butter outside, decadence all around. Butter makes the sandwich crispier and gives it a particular taste (which surely has a name but I’m oblivious to what it’s called).
Later when I went to Pune I discovered the alchemy of Pav Bhaji. This dish has butter fried pav and butter soaked bhaji. Hedonistic as shit. Sinful. Butter should be incorporated in its name somehow. Otherwise it is plain misleading.
And please don’t get me started on butter chicken 😋.
Now when I really grasp how much I love it, I have to have less of it for health reasons. It’s a pity, but such is life. You don’t get stuff when you want it, or even when you need it, you get it when you get it.
But it’s not the end of the road. Butter is not god. One can easily live with a lesser portion. Getting stuck is pointless. One closed door means a dozen new ones opening up. One just has to keep his head up, and spirits high. And go go go go goooooooooo……………………………..
